Banana Oat Pancakes

  • 1 small banana
  • 1 medium egg or flax egg* see recipe notes
  • 1/4 cup oats rolled or quick oats
  • 1 tsp cinnamon
  • 1 tsp chia or hemp seeds


  1. Mash the banana in a bowl.

  2. Add the remaining ingredients and stir to combine.

  3. Allow mixture to sit for about 5 minutes.

  4. Heat some coconut oil in a frypan and pour the mixture in to make two pancakes.

  5. Once you see bubbles popping on the surface, carefully flip each pancake and cook on the other side.

  6. Serve with some berries on top or on their own.. the banana makes them nice and sweet!

Recipe Notes

This recipe is for 1 serving, so double or triple to your requirements.

1 flax egg is 1 Tb flax meal mixed with 3 Tb water. Allow to sit for a couple of minutes to thicken up.
