Vegan Apple Cinnamon Muffins

There’s nothing quite like the combination of apple and cinnamon in my opinion! These Vegan Apple Cinnamon Muffins are a twist on the usual, with the same nourishing, comforting feeling of warm apple pie!  The eggs are replaced with flax meal and the milk with soy milk (or use any plant milk you like!). You can freeze them and pull them out for lunch boxes or snacks whenever you like. One of my all time faves!

Vegan Apple Cinnamon Muffins

  • 4 apples cored and grated
  • 2 Tb cinnamon
  • 2 cups wholemeal self-raising flour
  • 1 cup soy milk or plant milk of your choice
  • 1/4 cup olive oil
  • 1/4 cup pure maple syrup
  • 2 Tb flax meal
  • 6 Tb water


  1. Combine flax meal and water in a bowl and allow to sit for 5 minutes.

  2. Preheat oven to 180/350 degrees.

  3. Add flour and cinnamon to a separate bowl and mix.

  4. Add the milk, olive oil, syrup and grated apple to the flax mixture.

  5. Add the wet mix to the dry mix and combine.

  6. Spoon into lightly greased muffin tin.

  7. Bake for 15 minutes or until cooked through.
