Green Green Tofu Curry

It’s called Green Green Tofu Curry because it’s a green curry (surprise!) and it has a bunch of greens in it! There is nothing like and nice warm curry with your favourite rice or quinoa. I am obsessed. I love that you can make a curry in advance (in a hurry… sorry couldn’t help myself!) and I believe it actually tastes better the next day. Cold out of the fridge, even! Of course the heat totally depends on your taste, so add chilli where and when you like. I’m a bit of a woose when it comes to that so I go kinda mild. And the kids can eat it then too. Hope you enjoy!

Green Green Tofu Curry

Ingredients

  • 1 500g block firm tofu cut into cubes
  • 1 brown onion diced
  • 2 Tbsp green curry paste Use your fave one and adjust amount if needed
  • 1-2 clove garlic minced
  • 3cm knob fresh ginger finely grated
  • 1 small head broccoli chopped into small pieces
  • 1 cup green beans frozen or fresh
  • 1 tin coconut milk
  • 1 small tin bamboo shoots
  • 2 handfuls spinach

Instructions

  1. Prepare the vegetables as above.

  2. Heat a Tbsp olive oil in a large frypan on medium/high heat. Add the onion and saute until tender.

  3. Add the green curry paste, garlic and ginger and saute until fragrant.

  4. Add the coconut milk and bring to a boil. Reduce heat and simmer for 5 mins.

  5. Add the tofu and broccoli and heat through.

  6. Add the green beans, bamboo shoots and spinach.

  7. Simmer for 10-15 mins.

  8. Serve on your fave rice or quinoa and sprinkle with toppings of your choice. Eg. chilli, coriander, chopped peanuts.
