Veggie Fritters

These Veggie Fitters are such an easy way to get a bunch of veggies in and they taste amazing too. I love them with some sweet potato fries on the side and some sliced avocado on top. Add some salsa for an extra kick! They’re perfect for an easy weeknight dinner and taste so good the next day for lunch.  They are a hit with the kids too… winning! Lunchbox idea sorted!

Veggie Fritters

Ingredients

  • 1 medium zucchini
  • 1 large carrot
  • 1/2 cup corn kernels
  • 1/4 red onion
  • 1 handful fresh chives or any herb you like
  • 1 large egg or flax egg* see recipe notes
  • 1/2 cup gluten-free plain flour or regular flour
  • salt and pepper to taste
  • coconut oil for frying

Instructions

  1. Grate the zucchini and carrot and add to a large bowl. Add the corn.

  2. Finely slice the onion and chives and add to the bowl.

  3. Crack the egg and stir through.

  4. Add the flour, salt and pepper and combine well.

  5. Heat a frypan on high heat and melt coconut oil (to cover base)

  6. Spoon 1/4 cup portions of the mixture into the pan and fry for a couple of minutes each side.

  7. Remove from pan and allow to sit for a couple of minutes on paper towel.

  8. Serve with sweet potato wedges and some slices of avocado on top.

Recipe Notes

1 flax egg is 1 Tb flax meal mixed with 3 Tb water. Allow to sit for a couple of minutes to thicken up.
