Cauliflower pizza bases

Cauliflower pizza basesIf you’re trying to get more plants into your life (and we all should be!) then these cauliflower pizza bases are for you. They are also gluten and oil free.

We have a lot of Friday pizza nights with friends. It was about time we gave the cauliflower bases a try. They were great. We made smaller, personal-sized bases and this recipe made 11. We topped ours with olive tapenade, artichokes, arugula and dairy-free nut cheese, and they were delicious! You could try all your usual pizza faves, these bases can handle it.

Cauliflower pizza bases

  • 2 454g/16 oz bags frozen cauliflower florets or riced cauliflower
  • 6 Tbs flax seeds
  • 1 cup water
  • 3 cups gluten free flour
  • 1/4 cup nutritional yeast
  • Pinch salt
  • Big dash Italian herbs


  1. Partially defrost cauliflower for a couple of hours on the counter. 

  2. Preheat oven to 400 F/ 200 C.

  3. Cover 4 baking trays/cookie sheets with baking/parchment paper (or rotate a couple of trays).

  4. Rice the cauliflower in a food processor one bag at a time. It should be small and crumbly, about the size of rice.

  5. Cook all the cauliflower in a dry fry pan for approximately 8 minutes.

  6. Make flax eggs by combining the flax seeds and water and allow to sit for 5 minutes. 

  7. When the cauliflower cools drain off the excess water by squeezing through a nut milk bag, paper towel, tea towel etc. 

  8. Combine the cauliflower and flax eggs in a large bowl. Stir through the nutritional yeast, salt, and Italian herbs.

  9. Add the flour one cup at a time and work through until completely combined. If the mixture is too sticky add a little more flour. If it's too dry add a little water. 

  10. Take fist-sized balls of dough and flatten onto the trays, forming thin, flat circles. Repeat until all the dough has been used. You can store unused bases in the freezer. They are easier to store once baked. 

  11. Bake the bases for 25 minutes then flip and bake a further 5 minutes. 

  12. Cover bases with your favorite toppings and bake until the toppings are hot and cheese is melted. Approximately 10 minutes.
