Hooray! Christmas is here! I just love this time of year. Especially once the madness that accompanies the end of the school year subsides and there’s time to just enjoy each other’s company and think about all that’s evolved over the past few months. And while catching up with family and friends, it’s always nice to indulge in some festive treats, not to mention a tipple or two. We all know it! These Christmas Coconut Balls are the perfect little treat that taste so good, you wouldn’t believe they are made with healthy ingredients. They are on my list for sure this year!

Christmas Coconut Balls

  • 2 cups dessicated coconut
  • 1 cup puffed rice
  • 4 Tbsp coconut cream
  • 2 Tbsp pure maple syrup
  • 50 g dark chocolate
  • 1 handful dried cranberries


  1. Place the coconut, maple syrup and coconut cream in your food processor and whizz for a minute until the mixture starts to come together.

  2. Add the puffed rice and stir through until well combined. You want the mixture to be moist enough to press together easily so if need be, add a little more coconut cream.

  3. Roll the mixture into 12 balls and place in the fridge. 

  4. Meanwhile, melt the dark chocolate.

  5. Remove the balls from the fridge (after around 5 minutes) and spoon the chocolate over the top. Allow it to drizzle down the sides.

  6. Place a dried cranberry on top of each ball.

  7. Return to the fridge for 20 minutes to set. Remove and devour!

If you can't get your hands on puffed rice, you can use Rice Bubbles.
