Coconut Raspberry Nice Cream

Dairy free ice cream nice creamI am a self-confessed dessert person. I’ve always liked to have a sweet after dinner. The meal just isn’t complete without it! And we all know there are a tonne of not-so-healthy options for sweets that all taste really good. But this Coconut Raspberry Nice Cream is so lovely and sweet and tastes just like ice cream, you would hardly notice the difference. The recipe is for 1 person so double or triple to your needs. And remember you want to freeze your fruit ahead of time, so allow for that. I love playing around with all the nice cream recipes out there, but this one is by far my favourite. I hope you enjoy it too!

Coconut Raspberry Nice Cream

  • 1/2 cup coconut milk full cream
  • 1 frozen banana chopped
  • 1 cup frozen raspberries
  • 1 tsp vanilla extract
  • 1 tsp pure maple syrup


  1. Throw all the ingredients in the food processor and blitz for a minute. Scrape down the sides and blitz again if required.

  2. Scoop out into a bowl or cone and devour! Or you can place in a freezer-proof container for later. Just take it out 5 minutes before eating so it softens a little.
