Tofu Scramble Free Spirited Sisters

If you’re looking for a nice new addition to your breakfast repertoire, this is it! This Tofu Scramble is a perfect meal to start your day or as a lunch or dinner option too. I had it in a lettuce wrap the other day and it was delicious and so filling. It’s typically made for vegans as a substitute for eggs, but even for all those non-tofu lovers out there, I actually think you will be converted after trying this one! It’ll give you a good boost of protein to start the day, and is packed full of flavour.

  • 500g packet firm organic tofu chopped
  • 1 cup cashews raw
  • 1 small onion
  • 2 cloves garlic
  • 1 inch knob ginger
  • 1 small zucchini
  • 1 small carrot
  • 1 red capsicum/pepper
  • 1 Tbsp soy sauce or tamari


  1. Place cashews in a high powered food processor and process until crumbled. Remove and set aside.

  2. Add the onion, garlic and ginger to the food processor and process until finely chopped. 

  3. Add the tofu and process until crumbly.

  4. Heat coconut oil in a frying pan and add the mixture from the processor and the cashews. Sauté for 5 minutes.

  5. Meanwhile, add zucchini, carrot and capsicum to the processor and process until finely chopped.

  6. Add to the pan along with the soy sauce/tamari and saute for a further 10 minutes.

  7. Serve on a plate with a sprinkle of cheese or nutritional yeast and a nice serve of kimchi on the side. Or put it on a piece of toast. The choice is yours!
