Ingredients

Dipping chocolate

  • 1/4 cup cacao butter
  • 1/2 cup peanut butter (or almond butter)
  • 1/4 cup maple syrup
  • 1 heaped Tbsp raw cacao

Bites

  • 3 medium bananas
  • 2 Tbsp peanut butter (or almond butter)
  • Sprinkle of cinnamon
  • A few Goji berries, crushed nuts etc

Instructions

Dipping chocolate

  1. Melt cacao butter, peanut butter and maple syrup in a small pot on low-medium heat. Stir frequently until melted and combined. You could slice the bananas while the ingredients are melting, just be sure to keep an eye on it.

  2. Add the raw cacao and stir until completely combined.

Banana bites

  1. Peel and slice bananas into 1/4 inch/1 cm ish circles.

  2. Lay bananas out in pairs, sprinkle with cinnamon, then spread one of the pairs with a little peanut butter. Top with the other slice to make a sandwich.

  3. Use a toothpick to hold the "sandwich" together and dip in the chocolate. They will be slippery and the chocolate has a thick consistency, so it helps to use a spoon to coat the bite. If some of the peanut butter from the sandwiches gets into the chocolate, no problem, just stir it in!

  4. Place bite on a tray (that will fit in the freezer) lined with plastic wrap (so they don't stick) and lightly smooth out any crazy looking bits! I used a small rubber spatula.

  5. Pop a goji berry on top or sprinkle with chopped nuts etc. Repeat for all the bites.

  6. Place in the freezer for at least 30 minutes before serving. Best served chilled.
