Fresh Risoni Salad

Fresh Risoni Salad Free Spirited SistersThis simple, fresh little recipe is perfect for those times you say “I’ll bring a salad” and then forget until it’s an hour before go time! I have made this so many times, I actually started to call it my ‘one-trick pony risoni’, but it has always been a crowd-pleaser. If you’re not familiar with it, risoni is actually a form of pasta in the shape of rice (unfortunately not whole-grain but I’m searching of one!).

  • 1 500g packet of risoni
  • 2 lebanese cucumbers diced
  • 1 punnet cherry tomatoes halved
  • 1/4 red/spanish onion diced
  • 1 bunch basil chopped
  • 4 Tbsp olive oil extra virgin
  • 2 Tbsp apple cider vinegar
  • salt and pepper to taste


  1. Cook risoni according to packet instructions.

  2. Once risoni is cooked, drained and cooled a little, add it to a large serving bowl.

  3. Add the olive oil, vinegar, salt and pepper to a jug and whisk together. Pour this over the risoni.

  4. Add prepared cucumber, tomatoes, onion and basil and stir through.
