They’ll give you a boost of energy and a nice little protein kick from the chia seeds. You could even add some protein powder to give them extra oomph! They are nut-free so are perfect for lunchboxes too.

Apricot Coconut Energy Balls

Ingredients

  • 1 1/2 cup dried apricots
  • 1/2 cup dessicated coconut plus extra for rolling
  • 2 Tbsp coconut cream
  • 1 Tbsp chia seeds
  • 1 Tbsp maple syrup

Instructions

  1. Place the apricots in a food processor and blend until they are in small pieces.

  2. Add remaining ingredients and pulse until mixture comes together.

  3. Leave covered in the fridge for 15 minutes.

  4. Shake some coconut into an airtight container. Enough to cover the bottom.

  5. Roll the mixture into balls and place in the container. Put the lid on and roll the balls around until they're covered in coconut.

  6. Store in the fridge or freezer to munch as you please!
