Thai Chicken Bites

Thai Chicken Bites Free Spirited Sisters These Thai Chicken Bites are super quick and easy to make and are the perfect appetizer to bring along to your next festive gathering. I got the original recipe from a while back and have changed it over the years to suit different palates in our house. It’s brimming with beautiful Thai flavours of coriander (cilantro), lemongrass and ginger. Delish!

Thai Chicken Bites

  • 500 grams free range chicken mince
  • 2/3 cup coconut cream tinned
  • 1/2 cup coriander leaves shredded
  • 2 cloves garlic crushed
  • 1 Tbsp ginger fresh, grated
  • 1 Tbsp lemongrass fresh, grated
  • 1 Tbsp lime juice
  • salt to taste


  1. Preheat oven to 180/350 degrees.

  2. Combine all ingredients in a bowl.

  3. Spoon into greased 24 hole mini-muffin tin.

  4. Bake for 25 minutes or until brown and cooked through.

  5. Allow to cool for 10 minutes then turn out onto a serving platter. You can serve with toothpicks for easy eating. Yum!
