Mum’s Chicken Cacciatore
Ohhh the memories we have of our beautiful Mum creating and preparing delicious meals in the kitchen are endless. Mum always had a special way of doing things in the kitchen and was very meticulous in her method and presentation. An especially vivid memory I have was when Mum fulfilled her dream of doing an Italian Cooking Course. I remember the sparkle in her eye as she shared the knowledge she gained and needless to say, we were in for a treat. One of our favourite recipes from her repertoire is this Chicken Cacciatore recipe. It’s seriously next level, with it’s rich flavours of turmeric, white wine and masala. It was a staple in our house growing up and has now become the same in our own homes. Thanks Mum!
Mum's Chicken Cacciatore
- 2 chicken breasts cubed
- 2 Tbsp wholemeal flour
- 1 Tbsp turmeric
- 3 Tbsp olive oil
- 1 brown onion diced
- 2 cloves garlic crushed
- 1 can (400g) tomatoes diced
- 2 Tbsp tomato paste
- 1/2 cup white wine
- 6 mushrooms sliced
- 2 Tbsp masala
- salt and pepper to taste
Combine flour and turmeric in a zip lock bag.
Add the diced chicken and shake until it is well covered.
Heat 2 Tbsp of the oil in a frypan and add chicken. Cook until sealed.
Remove chicken from the pan and set aside.
Heat remaining oil and saute onion and garlic until soft.
Add the tomatoes, tomato paste, wine and season with salt and pepper. Simmer for 10 minutes.
Add chicken, mushrooms and masala and simmer for a further 15 minutes.
Serve with your choice of brown rice or wholemeal pasta and a sprinkle of parmesan cheese.
